FREE Tours of a Frank Lloyd Wright House!

The best part about summer….Road Trips!! Destination, Grand Rapids Michigan!!

Our day began in the Heritage Hills Historic District of Grand Rapids, at 450 Madison Avenue, at the Meyer May house. What makes this house so special? It was designed by the famous architect, Frank Lloyd Wright in 1909.

lakehouse2 063MM

It is called the Meyer May house because that is who the structure was initially designed for, a wealthy clothier in Grand Rapids and his family. What is really interesting about the house is that even though it was built over a century ago it doesn’t resemble the “typical” style of the 1900s. That is thanks to Frank Lloyd Wright’s Prairie style architecture which was the first uniquely American architectural style. The Prairie style was inspired by the Midwest with its broad flat landscapes and focused more on space, patterns, form, and lines, such a dramatic shift from what the “typical” style was of the time. So much so that Mr. May’s children were called “odd” thanks to the odd house they lived in. Back then most homes resembled a Victorian style and were highly decorative and ostentatious.

The Meyer May house is now owned by Steelcase and thanks to their funding and the time, research and meticulous detail of many professionals the Meyer May house has been restored to its original design after years of neglect including an addition to the original structure (which was removed), modifications (including lifting the entire roof and adding steel supports in order to restore the roofs cantilever design), etc. It truly pays homage to Wright’s original design. And is such a magnificent gift to the public. The viewing of the film and tour of the house are FREE!!!

lakehouse2 054MM

As an Interior Designer one of my fascinations with Frank Lloyd Wright is that he extended his work beyond the architecture, he designed the furniture, carpeting, stain glass windows, beds, toys for the children, etc. He truly encompassed the Arts and Crafts movement.

lakehouse2 043MM

lakehouse2 047MM

lakehouse2 042MM

Wright described his goal as such: “To thus make of a dwelling place a complete work of art… this is the modern American opportunity.”

 lakehouse2 052MM

It just fascinates me how he took meticulous care of detail in both the architecture and interior design. His use of scale and proportion can be noted throughout but two significant areas of the house that really stood out for me were the entrance and the master bedroom. The entrance was so tiny (to small to get a proper photograph), in fact the tour guide compared it to the entrance of a cave, I know I was experiencing a bit of claustrophobia when I entered. But then it gives way to this huge space, or does it?

lakehouse2 017MM

lakehouse2 018MM

lakehouse2 013MM

The grandeur of the space is mostly due to the fact that the entrance was so tiny and enclosed. The master bedroom also plays a visual illusion on the occupant thanks to the cantilevered roof it has a protruding window and large window box in addition to a higher ceiling that provides this sense of stateliness when in fact the square footage isn’t that big.

lakehouse2 037MM

lakehouse2 033MM

Also his careful use of lines, form, space, shape, and light add to the optical illusion of the interior. His tactful use of positive space and negative space inspires me. He manages to have a barrier between one space and the next yet also utilize daylighting thanks to his careful placement of lines.

He also seems to be obsessed with shape, particularly the circle within a square form; it can be seen quite frequently throughout the house.

 lakehouse2 016MM

lakehouse2 005MM

I could have spent hours in each room meticulously analyzing every angle, piece of furniture, placement of glass, etc. but the tour guide would not allow it.

 lakehouse2 040MM

lakehouse2 007MM

Which is why I am so thankful that the tours are free and the house isn’t located to far from home, thus, I am totally going back!! Though I shall forever treasure the first time I toured the house with my architects, my father & brother (who are both architects, what can I say, it runs in the family).

But wait, our day in Grand Rapids Michigan isn’t over yet!! Wait to you hear about where we ate! And where we enjoyed the perfect cappuccino! More to come soon…stay tuned!

Want to know my secret? Happy, Calm, Focused Giveaway! ($60 value)

At a playdate with friends the other day one of the moms turned to me and asked what my secret was? For a moment I stood perplexed. Why whatever did she mean!? Did she want to know if I had found the fountain of youth? Did I really look that good? I just started using a new shampoo; maybe I was rocking a sweet do? I couldn’t help but smile as I inquired,” what secret?”.

“Your mood, what’s your secret? You always seem so happy, peppy, in such a great mood and you have 3 kids. What is your secret? Because whatever it is I want some, no, I want A LOT” she requested.

I would be lying if I said I wasn’t slightly bummed that she wasn’t inquiring about my natural beauty secret. But oh well! Haha! Her comment had me thinking, hmm….it had been quite some time since I lashed out in pure fury at the kids. I have been very calm, collected, happy, and focused. I haven’t felt irritable, furious, exhausted, or experienced a foggy head in quite some time. In fact, even when I had a doozie of a day when the garbage disposal, dryer, and food processor broke followed by the car breaking down the next day I still maintained my positive outlook. I do believe it is working? What is it? Happy Calm Focused.

excalim_hcf_papajoebday 085

HCF stands for “Happy, Calm & Focused,” and that’s exactly what it supports. HCF is composed of amino-acids, vitamins, and minerals precisely formulated to produce a synergistic effect. HCF helps to support the increase of key “feel good” neurotransmitter levels in your brain which are responsible for helping you feel happy, calm, and focused every single day. Skeptical!?! I was too. I honestly didn’t think there was anyway a supplement could really have an effect like that on my brain. That is until I took my first dosage.

The directions indicate that the “average” dosage is 3 capsules on an empty stomach first thing in the morning ONLY with 8oz of water. That first dosage was WILD! I am apparently one of those sensitive people. That fist dosage almost zapped my motivation. Haha! Thus, every day after I only took 2 capsules.

If you feel that you should be noticing a difference, but are not, you may want to increase to six (6) capsules per day until you achieve the desired effect (In other terms this is called precursor preloading).†* On the other hand, certain individuals may benefit from lowering the dosage to one (1) capsule per day if you are sensitive or usually experience cleansing effects when taking new supplements, or have moderate-to-severe health challenges.† Unless you are still experiencing a brain-cleansing effect, most people increase to the standard dose after 1-2 weeks to achieve the desired effect.†* As with all dosages, once you have achieved the desired effect, you may experiment to determine the amount of HCF Happy, Calm & Focused you should continue to take in order to maintain the desired support for feeling happy, calm, and focused.*

 excalim_hcf_papajoebday 087

The clarity, calm, focus, and positive energy it has provided me is why I am officially hooked on HCF! I have also found that it makes PMS extremely tolerable, and almost unnoticeable. My hormone levels are no longer all over the place, just an FYI for the ladies in the crowd. Now, I am not certain about menopause but I would assume HCF wouldn’t hurt, only help. So what exactly is in these HCF capsules? I know this was a big concern of mine since we had just recently given up gluten.

HCF has Vitamins A, E, B1, B2, B3, B6, Folic Acid, Vitamin B12, Biotin, Vitamin B5, Calcium, Iron, Magnesium, Zinc, and Chromium. Click here for percentage of each.

No, gluten ingredients, animal ingredients or bi products are never used in HCF Happy, Calm & Focused. We use only pristine vegetable capsules instead of the commonly used gelatin animal capsules found with many supplements today. Additionally, all amino acids and neuro-nutrients used in HCF Happy, Calm & Focused contain no preservatives, coatings, sweeteners, yeast, fragrance, dairy, gluten, nuts, or wheat.

And as an added bonus! I do believe it might be aiding in a bit of weight loss!

HCF Happy, Calm & Focused has supported many people with their dieting interests. Interestingly, “Phenylpropanolamine” (a substance which attempts to mirror some of the activities of phenylalanine) is a synthetic substance used to promote the release of CCK (cholecystokinin) in the stomach, a “satiation” hormone which naturally induces satiety, transmitting its chemical message to the brain, signaling the body that it should stop eating.* Phenylalanine is reported to have similar attributes that may nutritionally decrease one’s appetite, creating a similar cause/effect to the synthetic substance.†* As always, we suggest consulting your healthcare professional before beginning any diet plan.

New Holland Brewing: Beer Sampling

I am sure many of us have heard the age old advice of the importance of location, location, location! And that also rings true for vacation. Location is the key! What I like about the Lake House location is that there are so many amazing towns and cities within a 60 mile radius to visit. Don’t get me wrong, we absolutely enjoy our beach days however the novelty of a new place and exploring all it has to offer is invigorating! Though, that invigoration can be short lived if your expedition is filled with the wrong type of company.

The Lake House is filled with selfless souls, each serving one another, each giving, contributing, lightening the load for the other, each doing selfless acts of kindness. There are no maids, we clean, cook, do laundry, and take out our own trash and yet with many hands serving one another the work becomes joy. There is something magical about cooking with a different loved one each meal, someone whom you otherwise probably wouldn’t even see most mornings/days. And with so many hands chipping in there are a lot of cooks available for the kitchen so everyone gets breaks. Yes, it is the people; the company you keep that truly defines if you are on vacation. If everyone were to sit around and relax while one person did all the work resentment would build, the atmosphere would turn to bitterness, and resentment & bitterness are two words that you should not pack when going on vacation!

Thanks to the Lake Houses amazing location and the selfless company kept there we are able to take little excursions here & there throughout the week, adding little bonus adventures to an already Ah-mazing vacation! Our first expedition for Lake House 2015 was to New Holland Brewing for Beer Sampling!! (And yes, as many of you know I am off grains and going gluten free but this is vacation….vacation!! I totally let loose on vacation; what’s a little bloating, inflammation, and discomfort?).

The kiddos stayed back at the house with my parents and helped prepare dinner for that evening, the theme was Italian and they pulled out ALL the stops. Then they were heading into town for lunch. See, we have different themes and different people are in charge of each, we have Italian night, Mexican, Polynesian, etc. which totally adds to all the fun! Thus, Beer Sampling only included the second generation Lake House dwellers, my sister, brother, their two friends, my hubby, and me. And it was a blast!

The art of craft…..Each bottle of New Holland Brewing craft beer and artisan spirits captures a flavor, a harvest, a season, a moment in time.

They honor those who put imagination, creativity and inspiration into their work. Their beer and spirits pair perfectly with a blank canvas, fertile soil, a blinking cursor, an empty plate or the hint of a spark in someone’s eye. The opportunity for art is everywhere.

lakehouseone 292BEER

We ended up ordering two samplers for the table but each consisted of the same six samples so that we could all taste and discuss the same beers. And since there were six of us it only made sense to allow each person to pick a sampler. So, are picks were Monkey King (my fav!), Full Circle, The Poet (which they use in a lot of their foods, including their ever popular chili), Macatwa Stout, White Hatter, and Sundog.

 lakehouseone 297BEER

lakehouseone 311BEER

It was fun tasting, discussing the beer, and enjoying great conversation over delicious food! (BTW-I did order the gluten free pizza, and it was delicious, not like some of the chewing cardboard gluten frees I have tasted in the past). It was an all-around fabulous afternoon!! Next year I think it might be fun to actually tour the brewery.

Pure Michigan!

As I sit here reflecting back on what was seriously the best week of 2015 the tears are billowing in the corners of my eyes. Why the tears? Have you ever been somewhere and had such a magnificent time with such amazing people that it literally hurt when you had to leave?  When the sheer gravity of the experience tugs at the heartstrings?  The memory of this week is so fresh, intense, yet fragile, & tender; it is like a heartache that needs to heal.  So what could cause such joy that it literally is painful to leave? Two words, PURE MICHIGAN!!

lakehouseone 129BLOG

The promise of those two words, Pure Michigan, followed by Lake House, are what get me through our long and lately ridiculously cold Northwest Ohio winters.  Those words also get me through the toughest moments life throws at me, like when our dog of 12 years died, husband started a new job after being at a company for 15 years, when we were on snow day #6, when sewage backed up into the basement, etc. Needless to say, the Lake House located in Pure Michigan has produced a little oasis of memories in my mind that I channel when I find myself in the deepest, darkest, most frustrating moments of life.  And then finally, alas, the week I have been longing for via a cocktail of memories, hope, & anticipation for 51 weeks arrives! Destination, Douglas Michigan!

lakehouse2 293BLOG

As we pull up into the driveway after a fun filled caravan up to the Lake House from Toledo the anticipation of memories to be made fills my soul while memories of the past make it sing. I see the porch where my grandfather would sit early in the morning sipping on coffee playing a game of Sorry with the kids while waiting to have eggs & bacon for breakfast as a family.  My eyes smile when they glance past the front patio where my uncle & godfather would walk around in search of deer in the wee hours of the morning and at dusk. And I am filled with pure exhilaration when I see the fire pit where a many songs have been singed, pie iron pizzas cooked, marshmallows roasted, shooting stars viewed, and timeless memories made. We are home for the week. A week filled with love, faith, family, friends, and fun!! A week that will have me longing for July 2016!

This year would mark the first without my grandfather and uncle, thus it was bittersweet. It was a milestone at the Lake House; only having 3 generations instead of 4. They were deeply missed. We made the most of our time & I can’t wait to share!! Our first stop, THE BEACH!!!

 lakehouse2 309BLOG

Lake Michigan!! Unsalted & Shark Free!! No joke, this lake is gorgeous!! It always fascinates me when walking the beach and hearing people not only speaking with strong accents but also speaking entirely different languages; people come from far and wide to enjoy all that Lake Michigan has to offer.

(Note the pic below: This is why I will NEVER ditch my stroller! (It also comes in handy when Christmas shopping….there is a cup holder for your latté, come on, why anyone would get rid of that & have to carry all their bags and latté, makes no sense!?!) We jammed all the beach “must haves” in that sucker & stroll it down to the beach).

lakehouseone 171BLOG

Though a bit chillier than past Julys we all made our way into the lake & a few of us were even daring enough to totally submerge in the lake. I mostly enjoyed watching the kiddos play in the water and make fun sandcastles and sand food.

lakehouse2 319BLOG

I definitely ate my weight in sand pizza & sand ice cream thanks to my 4 year old sand chef….thankfully I had some coconut water to wash it down, Lol!

lakehouseone 178BLOG

The only minor hiccup in our beach experience was when our sand chef lost her ice cream scoop; she was so distraught that the couple next to us offered up one of their shovels in place of her ice cream scoop. (Huge thank you to that amazing couple if you are reading this) Thankfully we located the scoop, it was buried in the sand, imagine that! lol!

After that long and exhausting day at the beach we replenished and quenched our sweet tooth with Kilwins AH-mazing fudge!! We are on vacation….I am fairly certain everything is half the calories on vacation. Lol! And FYI-EVERYTHING tastes better on vacation!

Kunkle 4th of July Parade!

We hit the road early in anticipation of a fourth of July parade like none other!! At least like none other that this city girl has seen. Our destination, Kunkle, OHIO! It is a very VERY small town out in the country, population, 246 people and is located approximately 65 miles from Toledo.  That little town holds a special place in my heart. I am a Kunkle.  Growing up I enjoyed watching my grandfather’s eyes light up when he talked about Kunkle Ohio, the family history, stories, etc. My grandfather passed away a few years back and is still deeply missed.  So when asked if we wanted to attend the 4th of July parade it was something I couldn’t pass up, in a way it would be like visiting the memory of a magnificent man that I had the privilege of calling grandpa.

As we approached our destination suddenly cars started pulling over to the shoulder/field, mid-country road and parking.  We would apparently be walking the rest of the way. Haha! As we took that stroll towards the parade route I was astonished at how many cars were parked and at the amount of people in this tiny little town.  Clearly, this was THE PLACE to be!! We managed to find a small patch of grass that wasn’t claimed and we laid out our blanket and propped open our chairs and waited in anticipation for the parade to begin!

kunkleparade 042

We could hear the roaring of the motorcycles approaching from around the corner. The first thing to capture the eye was all the red, white, and blue flags, the image was an impressive & patriotic one.

 kunkleparade 006

kunkleparade 009

Then we did something amazing, the Master of Ceremony requested that we all say the Pledge of Allegiance. I can not think of a more perfect way to begin a 4th of July parade!! I fear sometimes we forget why we have the 4th of July, why we have the fireworks & cookouts. It is SO important that we teacher our children the history of the United States of America!  (Here are some links on the Declaration of Independence: Education World,  Books about the 4th of July, Lessons & Activities)

After the Pledge of Allegiance we then took a moment to commemorate all those who have served and scarified for our country….again something we, as parents, need to explain to our children that freedom isn’t free, so many have scarified so that we can be where we are today!

kunkleparade 015

Speaking of history, it turns out that his parade originally began with a bunch of kids decorating their bikes. Who would have known it would evolve into the massive production it is today?

kunkleparade 094

kunkleparade 039

Our 4 year old nearly lost her mind when she saw a princess that was her age!! How adorable are they!?!

 kunkleparade 032

Then came, practically all little boys dream come true, a parade of fire trucks, SO MANY fire trucks!! It seemed like every county in the area had a truck in the parade. It was fascinating to see the various types of trucks, I had no idea there were so many! There were long ones, short ones, red ones, blue one….I sound like Dr. Seuss. LOL! And, as if seeing all those sweet fire trucks wasn’t enough, they, the passengers on the trucks, were tossing out candy to the crowd. The kiddos really made out on candy….look out Halloween you have some competition call the Kunkle 4th of July parade! Ha-ha!

 kunkleparade 023

What followed was something my kiddos have NEVER seen before, a parade of John Deeres and other various tractors, our son though it was the SWEETEST!!

kunkleparade 077

There was beautiful horses, ponies, a woman (and I apologize for not recalling her name) who literally looked like she was straight out of the 1800s, dressed & riding side saddle.   There was a 4-H float, church float, etc.

Suddenly there were semis coming through the parade, at first I thought the parade was over but then I realized they were part of the parade. Again, something you NEVER see in a city parade.

kunkleparade 115

Check this out, see that HUGE log? That is heading to Sauder’s to be transformed. How cool is that? I thought it was such a great opportunity for the kiddos to see how the log is transported.

kunkleparade 114

I so enjoyed not only watching the parade but watching my children’s expressions as they soaked in this new experience.  It was unlike anything we would see in the city which is what made it that much more memorable!

We will totally go back next year! But in terms of living in the country, which was honestly something I thought I wanted to do, I don’t think I could handle it. You can take the girl out of the city but you can’t take the city out of the girl. Lol! The fumes from the tractors, semis, horses, etc. combined with the hot sun did get the best of me, I started to feel a little queasy. A country girl I am not! But I sure do enjoy visiting from time-to-time!

kunkleparade 148momandmya

HUGE thank you to all the magnificent people who organized the parade, were in the parade, etc. I do believe we just started a new family tradition, grandpa would be proud!

Hope everyone had a safe & enjoyable 4th!! God Bless America!

Minted, brings a whole new meaning to Treasure Map!

I am always on the lookout for cool, unique, and possibly customizable gifts. Gifts for graduations, weddings, birthdays, Father’s Day, Mother’s Day, you name it! I have always kind of prided myself in my gift giving (Ms. Modest, over here, ha-ha!)  I try my best to channel the individual’s likes, dislikes, sense of humor, etc. And for the most part I have been spot on with my gift selections.

Here are some of the questions that I ask myself when seeking THE perfect GIFT:

  1. Where are they financially? What do they NEED? (I have friends that would much rather prefer a gift card to help with gas, a movie night, etc.)
  2. What do they NEED but don’t know it? (Like a mom who NEVER gets out, she needs a night out…make an appointment for her to get her nails done or a massage… & you watch her kiddos, perfect gift!!)
  3. How do they enjoy their free time/possible hobby they have? (I have some friends who enjoy trivia a lot! Others are mad about books, art, video games, etc. Hobbies are the perfect gift themes!)
  4. What types of movies/shows do they like, comedies, action, and/or adventure?
  5. Are they sentimental? (Now this is where my father & I fall…we will be thankful & appreciative of anything and everything we receive, however where our hearts & treasure truly lye are in the memories, the DVDs, VHS, photobooks, calendars, the people and amazing experiences we were so blessed to enjoy together on this planet…that is where the real treasures lye!)

Some past gifts that have totally rocked include, customized love monopoly for the hubby, calendars of the kiddos for the grandparents (we do this every Christmas), photobooks of family vacations for the grandparents are another huge hit, pottery painted by yours truly and/or kiddos depending on the occasion, jewelry from the Toledo Museum of Art’s store, etc. So when I came across Minted I nearly lost my mind!! I do believe I might have found a one stop, shop, & customized sweet items location! Minted offers the top 3 things I look for when seeking a sweet gift!

  1. Unique- whenever possible it is really awesome if you can gift an item that isn’t mass produced & support Independent Designers/Artists (even some from Ohio and one from Toledo!)
  2. Customizable
  3. Variety! And what is really cool is that Minted has “families” of products-so if I purchase something for Christmas I could get the matching home décor for Mother’s Day, score!!!

Okay, so this is what really got me excited!! Check this out….MAP GIFTS!!! Created by independent artist and customized by YOU!!!

SWEET! Right!? So, this is my plan (Dad, if per chance you are reading this stop, look away, LOOK AWAY!!), growing up we visited so many states, New England States (toured Ben & Jerry’s, Ocean Spray, the Von Trapp family lodge, etc.), Mount Rushmore (Corn Palace, Wall Drug, etc.), Grand Canyon, Vegas (baby!), California (World’s largest thermometer and more!), he was the original Clark Griswold (the Christian version) etc. So, my goal, with a little help from my siblings is to locate all those photos and place them in the corresponding state. The hardest part might be limiting the selection down to 4 or 5 photographs and deciding on the frame….I am torn between the reclaimed barn wood and distressed charcoal stain. Tough decisions ahead!

ohio2MIN-HJA-GCP-007_A_APZOHIO24x24_square_7OHIOFLordia24x24_square_6

The state map photos would also make awesome gift for friends who move out of state, what better way to commemorate your time together?

I also like this one, for my home…I might put this in our bathroom stating, you are peeing here and place it right above our toilet, lol!

USA2

Too much!?!  Clearly, if you are shopping for me I have a great sense of humor and am very sentimental so, good luck. Haha! Seriously though, whenever possible I do try to spend my money and time on experiences and what better way to commemorate those magnificent treasures than with a map to be treasured through a lifetime?

So, how cool are these maps? Where have you been? What maps are you getting?

Imagination Kingdom

I don’t know what is more fascinating, the Imagination Kingdom or all the amazing people who made Imagination Kingdom possible! This project is a true example of what is possible when we all come together. We could all learn something from the community of Wauseon, Ohio.

spangler 131

Imagination Kingdom is a handicapped accessible playground located in Reighard Park, in Wauseon, OH. It is the first ever 100% plastic playground in Ohio. (Why plastic? Maintenance isn’t as much, it doesn’t require staining & sealing every year like wooden playgrounds, and as an added bonus parents don’t have to worry about kiddos getting splinters).  The playground project was funded, all $250,000, by a committee who solicited area businesses, organizations, and individuals. They also sold engraved pavers & fence pickets which can be seen as you walk up and around the playground. And get this, the playground was no only built by the community, but was entirely staffed by volunteers!! Ah-mazing!!

spangler 134

As we pulled up to Imagination Kingdom all I could hear was oohhs & aahhs coming from the back seats. “It’s a CASTLE!” screamed the 4 year old. The car had barely come to a complete stop and they were unbuckling and jumping out in pure elation and anticipation of the fun to be had! “I am going to be Rapunzel “, yelled out the 4 year old as she ran up to the castle. Meanwhile my 8 & 9 year olds ran off to explore. Mind you, there is no running off; the entire Kingdom is fenced in, a mother’s dream come true!! But it is large enough that they felt like they were exploring on their own.

spangler 143IK

spangler 163

spangler 149

We enjoyed a brief interlude from exploration to enjoy some jams!! How cool are these? They are by Sound Play.

spangler 136

spangler 140

From a parents perspective I like the fact that the Kingdom was separated.  Far too often little ones get trampled on by the big kids. It was nice that the little ones have their own space. I also like the fact that the big kid space and little kid space were right next to each other; it was easy for me to keep an eye on all 3 kiddos.

spangler 141

spangler 145ik

spangler 147ik

Imagination Kingdom is definitely a destination. You will want to linger for a little longer than most playgrounds, which is why I advise stopping by The Red Rambler on your way there and grabbing yourself a refreshment.

Gluten FREE Pizza, that tastes good!? It DOES Exist!!

It has been a LONG difficult week. A trip with the gals to Columbus proved to be a bit more tempting than I had anticipated. Mind you, I did pack healthy food and snacks, which worked at first.  We stopped at Starbucks (I had a cup of dark coffee), The Thurman Café (I had a side salad and boneless chicken wings with no sauce and tried my best to remove the breading), at the concert they had bar type drinks and food (I had water), after the concert I caved a bit, we had munchies back in the room (I had a few M&Ms & Pringles), and then this girl REALLY caved at McDonald’s for breakfast. I ordered the egg white delight and yes, I ate ALL of it, muffin too!! I felt horrible afterward. I had come so far!! The worst part was after I got home I found myself craving carbs!! I NEEDED a pizza, NEEDED!! Crazy, right!? I have found that it is moments like these that we have a very difficult decision. We can either say screw it, and go back to old habits, or forgive ourselves and get back on the healthy eating plan. I decided on the latter but I STILL wanted Pizza!! So I made cauliflower pizza crust! It tasted amazing…like an artisan pizza. But I will tell you truthfully that it took a lot of work & time…at least when compared to a “Hot & Ready” or frozen pizza. If you When you make this I would suggest doubling the recipe so you have some “cauliflower dough” for a future pizza.

Ingredients:

2 pounds cauliflower

¼ cup feta cheese

1 egg

1 teaspoon Italian seasoning

Directions:

Clean and cut up cauliflower. Place in food processor and pulse till it is the consistency of rice. Fill large put with roughly 1-1/2 inches water and bring to a boil. Place cauliflower in pot, cover with lid, and cook for 5 minutes. Get a strainer, place cheesecloth over strainer, and drain the cauliflower into the cheesecloth.  (Don’t have cheesecloth, improvise…I found this bag that contained limes to be quite useful).  Twist and squeeze out all the water. Place cauliflower in bowl; add 1 beaten egg, cheese, & Italian Seasoning. Mix everything together.  Place parchment paper over cookie sheet. Pour “dough” onto parchment paper, spread dough out and create a crust for the pizza. “Dough” should be 1/3 inch thick. Bake at 400 for 35 minutes or until golden brown around crust. Remove from oven and add toppings.

And now I will answer what I know I was wondering…doesn’t it make you feel WAY gassy? I can confirm that after eating half this pizza (yep, no shame! Haha!) I was not gassy. And no, I did not have to go #2 quickly or a lot. It was damn good though!! Bacon & Feta, nothing better!! What is you favorite pizza topping? Any strange/weird toppings you like?

Clean underwear NEED not apply!

As I stand here in my kitchen I find myself becoming overwhelmed with emotion; gratitude, appreciation, and love.  Yesterday everything broke, our garbage disposal, dryer, and food processor (mid-preparations for Father’s Day!), it was frustrating, inconvenient, and financially stressful. Today is our son’s b-day, 8 years old!! We really didn’t plan anything big( not even a cake, which I feel really bad about, especially considering we have ALWAYS done something in the past, DARN MOMMY GUILT!!) and with having to replace a few big ticket items getting his b-day gift and Father’s Day gifts put us over our budget. Thus, our plans today consisted of attending our son’s field day for baseball and participating in Relay for Life. Rather uneventful. Then I started blending!

As I mentioned, our food processor broke mid-Father’s Day preparations. So I asked my neighbor if his late wife, who died from lung cancer a few years after we moved in (roughly 8 years ago), had a food processor. I even slipped when I asked. I said, “Does Emmy have a food processor?” Then I quickly corrected myself and declared, “Did, Emmy have a food processor?” I have to be honest a part of me knew he did have one, I don’t know how or why, but I knew to ask him. And sure enough, he did have one! And with our busy day I am just now getting around to blending ingredients at 8pm. So as I stand here blending nuts and dates for Father’s Day treats I find my mind wondering. The same thing happens when I iron so I gave it up. Haha! I found myself overjoyed with gratitude and appreciation.

My son’s coaches were amazing this year (and last year). I am so grateful that they volunteered their time, shared their skill, talent, and were so patient with the boys.  And, get this, they even remember that today, their last game, was Max’s b-day and they had a balloon and candy for him. Tell me that wasn’t the sweetest!! So after his game he received a trophy, ribbon, balloon with treats, AND, the cherry on his birthday sundae, Muddy & Mudonna (Our Toledo Mud Hens Mascots) showed up just in time & right next to the field he was playing on to sign his baseball cap and get a pic! PRICELESS!! I couldn’t have planned that any more perfect if I tried!!

Fast forward a few hours and my daughter and I attended Rely for Life for the American Cancer Society.  Mind you there was a lot of planning that went into the event.

maxbdayrealyfrolife 070

Our team organizer and team mates did a fabulous job organizing everything, making our t-shirts, putting together raffle items, schedules, signs, etc.

maxbdayrealyfrolife 055

My daughter and I enjoyed going around the track and seeing what everyone had in their tents, seeing all the fun things people were dressed up in, getting a pic with the University of Toledo’s Mascot….

and most importantly, simply enjoying each other’s company (which is a true gift).   I couldn’t help become a little sad when I saw pic of ALL those loved ones who have died from cancer….the littlest really tugged at my heart strings. So, what have I learned from today? Why all the emotion? Why all the gratitude and appreciation?

Simple- I. AM. ALIVE!! My Children are ALIVE!! My son celebrated his 8th birthday today!! And I am so thankful for that! There are so many who have lost the battle to cancer. We never know what tomorrow holds. So maybe I DID wear DIRTY underwear today because my dryer is broken and maybe I didn’t bake my son that cake, but guess what, he was here & I was here! I am so thankful for today. I am so grateful for ALL the amazing people (coaches, teachers, friends, family) in my life, my community, my neighborhood!! I am so thankful for all the souls that I have had the pleasure of meeting before they left this earth. I am thankful for Emmy and her food processor. Back when her son turned 8 years old and she purchased her food processor I know she had no idea that in her 50s she would lose a battle with lung cancer. So, what is my message? LIVE!! Live BIG! Don’t masks your emotions with drugs and alcohol, live it all, good and bad!! Feel the pain. Feel the joy. FEEL it ALL!! Tomorrow is not promised. We never know when our lifetime is up. Don’t not show up because you have to wear dirty underwear! Thank those who should be thanked. Forgive those who need forgiveness, including yourself (including not baking your child a birthday cake…perhaps being together is celebration enough?). Don’t live with regret. Don’t live with grudges. Say yes to adventure!! Simply LIVE!! We owe it to all those who have been lost FAR before we would have liked to live our lives to our fullest. May we all be so blessed to live life in a state of gratitude, appreciation, and love!  (Note, this doesn’t mean perfection….and clean underwear need not always apply. Lol!)
