Sleepovers were a rite of passage, an opportunity to allow us kids to have a bit of independence away from home and have fun! What I didn’t realize as a child was all the work my mom put into planning a sleepover, obviously I was too distracted by more important things, like what movie we were going to rent from Hollywood Video, and what toppings we wanted on our pizza. But now that I’m the mom I have a newfound appreciation for the time and energy my mom put into planning my sleepovers.

Why Meal Plan?

“Boss up and change your life”, that’s legit my favorite line from one of Lizzo’s popular songs. Why? Because that line is such a true statement, the only person responsible for your life is you! Sure there are environmental influences and we cannot change the inevitable, but ultimately, like Charles R. Swindoll said, “Life is 10% what happens to you and 90% how you react to it”. Bottomline, you’re responsible for your own happiness, no one else, and no one else can “make you” do anything, or, not do something. Sure, we make excuses sometimes, and sometimes we are just so frickin tired, am I right mommas?!  So where am I going with this? Once we realize no one else is responsible for our happiness or lack thereof, or the choices we make when it comes to our health, what we eat, and when we eat, then, and only then can we boss up and change our lives. Thus, after 3 cups of coffee and listening to Lizzo essentials on Itunes for an hour I decided to boss up and change my life!

This is long overdue

I’ve been meaning to write this for some time now. It’s long overdue. But every time I escape into the computer room, open my laptop, my fingers barely graze the keys, and a silent alarm must sound altering the children that I’m about to give something else my undivided attention. For they all seemed to beacon before I can even type a word, “Mom, I need help submitting….”, “Mom, my screen froze!”, “Mom, I can’t type on my work in Google Docs”. It’s a miracle they aren’t banging on the door right now. I am currently hiding out in the bathroom, on the floor, with my laptop, fan on, so hopefully I’ll have a few uninterrupted minutes…I took this idea from the “Dad Handbook” ;), lol! So needless to say, this letter has been on my heart for some time, and it embarrasses me that I haven’t sent this sooner. I don’t know if you know this or not, but you’re such an important and significant part of my life. They say that life isn’t measured by the number of breaths we take, but by the moments that take our breath away and though, an eloquent idea, I’d add that it isn’t just the big moment in life that matters, but the everyday that embrace life’s imperfections.  Looking back on my lifetime thus far most of my life’s imperfections, serious contemplations, and happy memories either took place with you or you helped me get through them, and I’d be remiss if I didn’t take this time to express just how much you’ve played a role in those moments.

It is going to be hard to say goodbye to 2015 however my heart is a bit lighter knowing that 2016 will be filled with new adventures, recipes, and fashion!?! Yep, you heard correctly, for 2016 we will be adding fashion to the Mom on the go in Holy Toledo mix!!! How was your 2015, what was the highlight? What are you looking forward to in 2016? Vegetable Chili Con Queso
Ingredients
1 15 ounce can pinto beans, rinsed and drained
115 ounce can black beans, rinsed and drained
115 ounce can chili beans with chili gravy, do not drained
110 ounce can chopped tomatoes and green chile peppers, do not drained
1 1/4 cups chopped zucchini (1 medium)
1 1/4 cups chopped yellow summer squash
1 cup chopped onion (1 large)
1/4 cup tomato paste
2 teaspoons chili powder
4 cloves garlic, minced
3 cups shredded Colby and Monterey Jack cheese (12 ounces)

Directions: Mix all ingredients together place in crock pot and heat for 4-6 hours
